Any camera decision will obviously take relative prices into account. The listed launch prices provide an indication of the market segment that the manufacturer of the cameras have been targeting. The SX510 was launched at a lower price than the D7500, despite having a lens built in. Usually, retail prices stay at first close to the launch price, but after several months, discounts become available. Later in the product cycle and, in particular, when the replacement model is about to appear, further discounting and stock clearance sales often push the camera price considerably down. Then, after the new model is out, very good deals can frequently be found on the pre-owned market.

The sensor in the SX510 has a native 4:3 aspect ratio, while the one in the D7500 offers a 3:2 aspect.
With 20.7MP, the D7500 offers a higher resolution than the SX510 (15.9MP), but the D7500 nevertheless has larger individual pixels (pixel pitch of 4.22μm versus 1.33μm for the SX510) due to its larger sensor. Moreover, the D7500 is a much more recent model (by 3 years and 7 months) than the SX510, and its sensor will have benefitted from technological advances during this time that further enhance the light gathering capacity of its pixel-units. Coming back to sensor resolution, it should be mentioned that neither of the two cameras has an anti-alias filter installed, so they are able to capture all the detail the sensor resolves.
The resolution advantage of the Nikon D7500 implies greater flexibility for cropping images or the possibility to print larger pictures. The maximum print size of the D7500 for good quality output (200 dots per inch) amounts to 27.8 x 18.6 inches or 70.7 x 47.1 cm, for very good quality (250 dpi) 22.3 x 14.8 inches or 56.6 x 37.7 cm, and for excellent quality (300 dpi) 18.6 x 12.4 inches or 47.1 x 31.4 cm. The corresponding values for the Canon SX510 are 23 x 17.3 inches or 58.5 x 43.9 cm for good quality, 18.4 x 13.8 inches or 46.8 x 35.1 cm for very good quality, and 15.4 x 11.5 inches or 39 x 29.3 cm for excellent quality prints.
The Canon PowerShot SX510 HS has a native sensitivity range from ISO 80 to ISO 3200. The corresponding ISO settings for the Nikon D7500 are ISO 100 to ISO 51200, with the possibility to increase the ISO range to 50-164000.

Many modern cameras are not only capable of taking still images, but can also record movies. One differentiating feature between the two cameras concerns the touch sensitivity of the rear screen. The D7500 has a touchscreen, while the SX510 has a conventional panel. Touch control can be particularly helpful, for example, for setting the focus point.

It is notable that the D7500 has a microphone port, which can help to improve the quality of audio recordings by attaching an external microphone. The SX510 does not feature such a mic input.
The D7500 is a recent model that features in the current product line-up of Nikon. In contrast, the SX510 has been discontinued (but can be found pre-owned on eBay).
