Any camera decision will naturally be influenced heavily by the price. The retail prices at the time of the camera’s release place the model in the market relative to other models in the producer’s line-up and the competition. The B700 was launched at a markedly lower price (by 33 percent) than the G7X Mark III, which puts it into a different market segment. Usually, retail prices stay at first close to the launch price, but after several months, discounts become available. Later in the product cycle and, in particular, when the replacement model is about to appear, further discounting and stock clearance sales often push the camera price considerably down.
Sensor comparison
The size of the sensor inside a digital camera is one of the key determinants of image quality. All other things equal, a large sensor will have larger individual pixel-units that offer better low-light sensitivity, wider dynamic range, and richer color-depth than smaller pixels in a sensor of the same technological generation. Furthermore, a large sensor camera will give the photographer more possibilities to use shallow depth-of-field in order to isolate a subject from the background. On the downside, larger sensors are more costly to manufacture and tend to lead to bigger and heavier cameras and lenses.
Of the two cameras under consideration, the Canon G7 X Mark III features an one-inch sensor and the Nikon B700 a 1/2.3-inch sensor. The sensor area in the B700 is 76 percent smaller. As a result of these sensor size differences, the cameras have a format factor of, respectively, 2.7 and 5.6. The sensor in the G7X Mark III has a native 3:2 aspect ratio, while the one in the B700 offers a 4:3 aspect.
Despite having a smaller sensor, the B700 offers a slightly higher resolution of 20.2 megapixels, compared with 20 MP of the G7X Mark III. This megapixels advantage comes at the cost of a higher pixel density and a smaller size of the individual pixel (with a pixel pitch of 1.18μm versus 2.41μm for the G7X Mark III). Moreover, it should be noted that the G7X Mark III is much more recent (by 3 years and 4 months) than the B700, and its sensor will have benefitted from technological advances during this time that further enhance the light gathering capacity of its pixels. Coming back to sensor resolution, it should be mentioned that the B700 has no anti-alias filter installed, so that it can capture all the detail its sensor resolves.
The Canon PowerShot G7 X Mark III has a native sensitivity range from ISO 125 to ISO 12800, which can be extended to ISO 125-25600. The corresponding ISO settings for the Nikon Coolpix B700 are ISO 100 to ISO 3200 (no boost).
Technology-wise, both cameras are equipped with BSI-CMOS (Backside Illuminated Complementary Metal–Oxide–Semiconductor) sensors. Both cameras use a Bayer filter for capturing RGB colors on a square grid of photosensors. This arrangement is found in most digital cameras.
Since 2007, DXO Mark has published sensor performance measurements that have been derived using a consistent methodology. This service assesses and scores the color depth ("DXO Portrait"), dynamic range ("DXO Landscape"), and low-light sensitivity ("DXO Sports") of camera sensors, and also publishes an overall camera score. The table below summarizes the physical sensor characteristics and sensor quality findings and compares them across a set of similar cameras.

Note: *) Information refers to the mechanical shutter, unless the camera only has an electronic one. |
One differentiating feature between the two cameras concerns the touch sensitivity of the rear screen. The G7X Mark III has a touchscreen, while the B700 has a conventional panel. Touch control can be particularly helpful, for example, for setting the focus point.
Both cameras have an articulated rear screen that can be turned to be front-facing. This feature will be particularly appreciated by vloggers and photographers who are interested in taking selfies. The reported shutter speed information refers to the use of the mechanical shutter. Yet, some cameras only have an electronic shutter, while others have an electronic shutter in addition to a mechanical one. In fact, the G7X Mark III is one of those camera that have an additional electronic shutter, which makes completely silent shooting possible. However, this mode is less suitable for photographing moving objects (risk of rolling shutter) or shooting under artificial light sources (risk of flickering).
The Canon G7 X Mark III and the Nikon B700 both have an intervalometer built-in. This enables the photographer to capture time lapse sequences, such as flower blooming, a sunset or moon rise, without purchasing an external camera trigger and related software.
Both the G7X Mark III and the B700 have zoom lenses built in. The G7X Mark III has a 24-100mm f/1.8-2.8 optic and the B700 offers a 24-1440mm f/3.3-6.5 (focal lengths in full frame equivalent terms). Hence, the Canon and Nikon provide the same view at the wide-angle end, but the Nikon has more tele-photo reach at the long end. The G7X Mark III offers the faster maximum aperture.
Concerning the storage of imaging data, both the G7X Mark III and the B700 write their files to SDXC cards. The G7X Mark III supports UHS-I cards (Ultra High Speed data transfer of up to 104 MB/s), while the B700 cannot take advantage of Ultra High Speed SD cards.
Connectivity comparison
For some imaging applications, the extent to which a camera can communicate with its environment can be an important aspect in the camera decision process. It is notable that the G7X Mark III has a microphone port, which is missing on the B700. Such an external microphone input can help to substantially improve the quality of audio recordings when a good external microphone is used.
The G7X Mark III is a recent model that features in the current product line-up of Canon. In contrast, the B700 has been discontinued (but can be found pre-owned on ebay). There has not been a direct replacement model for the B700 from Nikon. Further information on the features and operation of the G7X Mark III and B700 can be found, respectively, in the Canon G7 X Mark III Manual (free pdf) or the online Nikon B700 Manual.

If the count of relative strengths (bullet points above) is taken as a measure, the G7X Mark III is the clear winner of the match-up (16 : 9 points). However, the pertinence of the various camera strengths will differ across photographers, so that you might want to weigh individual camera traits according to their importance for your own imaging needs before making a camera decision. A professional wedding photographer will view the differences between cameras in a way that diverges from the perspective of a travel photog, and a person interested in cityscapes has distinct needs from a macro shooter. Hence, the decision which camera is best and worth buying is often a very personal one.
How about other alternatives? Do the specifications of the Canon G7 X Mark III and the Nikon B700 place the cameras among the top in their class? Find out in the latest Best Travel-Zoom Camera and Best Superzoom Camera listings whether the two cameras rank among the cream of the crop.
In any case, while the comparison of the spec-sheets of cameras can offer a general idea of their imaging potential, it remains incomplete and does no justice, for example, to the way the G7X Mark III or the B700 perform in practice. User reviews, such as those found at amazon, can sometimes inform about these issues, but such feedback is often incomplete, inconsistent, and biased.

Note: (+ +) highly recommended; (+) recommended; (o) reviewed; (..) not available. |
The above review scores should be interpreted with care, though. The ratings were established in reference to similarly priced cameras that were available in the market at the time of the review. Hence, a score should always be seen in the context of the camera's market launch date and its price, and comparisons of ratings among very different cameras or across long time periods have little meaning. Also, please note that some of the review sites have changed their methodology and reporting over time.
