The price is, of course, an important factor in any camera decision. The listed launch prices provide an indication of the market segment that the manufacturer of the cameras have been targeting. The R5 C was launched at a somewhat lower price (by 25 percent) than the GFX 100S, which makes it more attractive for photographers on a tight budget. Normally, street prices remain initially close to the MSRP, but after a couple of months, the first discounts appear. Later in the product cycle and, in particular, when the replacement model is about to appear, further discounting and stock clearance sales often push the camera price considerably down.
Sensor comparison
The size of the sensor inside a digital camera is one of the key determinants of image quality. All other things equal, a large sensor will have larger individual pixel-units that offer better low-light sensitivity, wider dynamic range, and richer color-depth than smaller pixels in a sensor of the same technological generation. Further, a large sensor camera will give the photographer additional creative options when using shallow depth-of-field to isolate a subject from its background. On the downside, larger sensors tend to be associated with larger, more expensive camera bodies and lenses.
Of the two cameras under consideration, the Canon R5 C features a full frame sensor and the Fujifilm GFX 100S a medium format sensor. The sensor area in the GFX 100S is 67 percent bigger. As a result of these sensor size differences, the cameras have a format factor of, respectively, 1.0 and 0.79. The sensor in the R5 C has a native 3:2 aspect ratio, while the one in the GFX 100S offers a 4:3 aspect.
With 101.8MP, the GFX 100S offers a higher resolution than the R5 C (44.8MP), but the GFX 100S has smaller individual pixels (pixel pitch of 3.76μm versus 4.39μm for the R5 C). It is noteworthy in this context that the R5 C is a somewhat more recent model (by 11 months) than the GFX 100S, and its sensor might have benefitted from technological advances during this time that further enhance the light gathering capacity of its pixel-units. Coming back to sensor resolution, it should be mentioned that the GFX 100S has no anti-alias filter installed, so that it can capture all the detail its sensor resolves.
The resolution advantage of the Fujifilm GFX 100S implies greater flexibility for cropping images or the possibility to print larger pictures. The maximum print size of the GFX 100S for good quality output (200 dots per inch) amounts to 58.2 x 43.7 inches or 147.9 x 110.9 cm, for very good quality (250 dpi) 46.6 x 34.9 inches or 118.3 x 88.8 cm, and for excellent quality (300 dpi) 38.8 x 29.1 inches or 98.6 x 74 cm. The corresponding values for the Canon R5 C are 41 x 27.3 inches or 104 x 69.4 cm for good quality, 32.8 x 21.9 inches or 83.2 x 55.5 cm for very good quality, and 27.3 x 18.2 inches or 69.4 x 46.3 cm for excellent quality prints.
Unlike the R5 C, the GFX 100S has the capacity to capture high quality composite images (YESMP) by combining multiple shots after shifting its sensor by miniscule distances. This multi-shot, pixel-shift mode is most suitable for photography of stationary objects (landscapes, studio scenes).
The Canon EOS R5 C has a native sensitivity range from ISO 100 to ISO 51200, which can be extended to ISO 50-102400. The corresponding ISO settings for the Fujifilm GFX 100S are ISO 100 to ISO 12800, with the possibility to increase the ISO range to 50-102400.
In terms of underlying technology, the R5 C is build around a CMOS sensor, while the GFX 100S uses a BSI-CMOS imager. Both cameras use a Bayer filter for capturing RGB colors on a square grid of photosensors. This arrangement is found in most digital cameras.

Many modern cameras cannot only take still pictures, but also record videos. Both cameras under consideration are equipped with sensors that have a sufficiently high read-out speed for moving images, but the R5 C provides a higher video resolution than the GFX 100S. It can shoot video footage at 8k/60p, while the Fujifilm is limited to 4K/30p.

One feature that differentiates the GFX 100S and the R5 C is in-body image stabilization (IBIS). The GFX 100S reduces the risk of handshake-induced blur with all attached lenses, while the R5 C offers no blur reduction with lenses that themselves do not provide optical image stabilization.
