Any camera decision will naturally be influenced heavily by the price. The manufacturer’s suggested retail prices give an idea on the placement of the camera in the maker’s lineup and the broader market. The 80D was launched at a markedly lower price (by 60 percent) than the D700, which puts it into a different market segment. Usually, retail prices stay at first close to the launch price, but after several months, discounts become available. Later in the product cycle and, in particular, when the replacement model is about to appear, further discounting and stock clearance sales often push the camera price considerably down. Then, after the new model is out, very good deals can frequently be found on the pre-owned market.
Sensor comparison: Canon 80D vs Nikon D700
The size of the sensor inside a digital camera is one of the key determinants of image quality. A large sensor will generally have larger individual pixels that offer better low-light sensitivity, provide wider dynamic range, and have richer color-depth than smaller pixels in a sensor of the same technological generation. Further, a large sensor camera will give the photographer additional creative options when using shallow depth-of-field to isolate a subject from its background. On the downside, larger sensors are more costly to manufacture and tend to lead to bigger and heavier cameras and lenses.
Of the two cameras under consideration, the Canon 80D features an APS-C sensor and the Nikon D700 a full frame sensor. The sensor area in the D700 is 154 percent bigger. As a result of these sensor size differences, the cameras have a format factor of, respectively, 1.6 and 1.5. Both cameras have a native aspect ratio (sensor width to sensor height) of 3:2.
Technology-wise, both cameras are equipped with CMOS (Complementary Metal–Oxide–Semiconductor) sensors.
Despite having a smaller sensor, the Canon 80D offers a higher resolution of 24 megapixels, compared with 12.1 MP of the Nikon D700. This megapixels advantage comes at the cost of a higher pixel density and a smaller size of the individual pixel (with a pixel pitch of 3.75μm versus 8.43μm for the D700). However, it should be noted that the 80D is much more recent (by 7 years and 7 months) than the D700, and its sensor will have benefitted from technological advances during this time that make it possible to gather light more efficiently.
The 80D has on-sensor phase detect pixels, which results in fast and reliable autofocus acquisition even during video recording.
The Canon EOS 80D has a native sensitivity range from ISO 100 to ISO 16000, which can be extended to ISO 100-25600. The corresponding ISO settings for the Nikon D700 are ISO 200 to ISO 6400, with the possibility to increase the ISO range to 100-25600..

One differentiating feature between the two cameras concerns the touch sensitivity of the rear screen. The 80D has a touchscreen, while the D700 has a conventional panel. Touch control can be particularly helpful, for example, for setting the focus point.The 80D has an articulated LCD that can be turned to be front-facing. It is notable that the 80D offers wifi support, while the D700 does not. Wifi can be a very convenient means to transfer image data to an off-camera location.
Studio photographers will appreciate that the Nikon D700 (unlike the 80D) features a PC Sync socket, so that professional strobe lights can be controlled by the camera.
