The Canon EOS 350D (called Canon XT in some regions) and the Fujifilm GFX 100S are two digital cameras that were officially introduced, respectively, in February 2005 and January 2021. Any camera decision will obviously take relative prices into account. The listed launch prices provide an indication of the market segment that the manufacturer of the cameras have been targeting. The 350D was launched at a markedly lower price (by 85 percent) than the GFX 100S, which puts it into a different market segment. Usually, retail prices stay at first close to the launch price, but after several months, discounts become available. Later in the product cycle and, in particular, when the replacement model is about to appear, further discounting and stock clearance sales often push the camera price considerably down. Of the two cameras under consideration, the Canon 350D features an APS-C sensor and the Fujifilm GFX 100S a medium format sensor. The sensor area in the GFX 100S is 338 percent bigger. As a result of these sensor size differences, the cameras have a format factor of, respectively, 1.6 and 0.79. The sensor in the 350D has a native 3:2 aspect ratio, while the one in the GFX 100S offers a 4:3 aspect.
With 101.8MP, the GFX 100S offers a higher resolution than the 350D (8MP), but the GFX 100S has smaller individual pixels (pixel pitch of 3.76μm versus 6.41μm for the 350D). Yet, the GFX 100S is a much more recent model (by 15 years and 11 months) than the 350D, and its sensor will have benefitted from technological advances during this time that enhance the light gathering capacity of its pixel-units. Coming back to sensor resolution, it should be mentioned that the GFX 100S has no anti-alias filter installed, so that it can capture all the detail its sensor resolves.
The resolution advantage of the Fujifilm GFX 100S implies greater flexibility for cropping images or the possibility to print larger pictures. The maximum print size of the GFX 100S for good quality output (200 dots per inch) amounts to 58.2 x 43.7 inches or 147.9 x 110.9 cm, for very good quality (250 dpi) 46.6 x 34.9 inches or 118.3 x 88.8 cm, and for excellent quality (300 dpi) 38.8 x 29.1 inches or 98.6 x 74 cm. The corresponding values for the Canon 350D are 17.3 x 11.5 inches or 43.9 x 29.3 cm for good quality, 13.8 x 9.2 inches or 35.1 x 23.4 cm for very good quality, and 11.5 x 7.7 inches or 29.3 x 19.5 cm for excellent quality prints.
The GFX 100S has on-sensor phase detect pixels, which results in fast and reliable autofocus acquisition even during live view operation.
Unlike the 350D, the GFX 100S has the capacity to capture high quality composite images (YESMP) by combining multiple shots after shifting its sensor by miniscule distances. This multi-shot, pixel-shift mode is most suitable for photography of stationary objects (landscapes, studio scenes).
The Canon EOS 350D has a native sensitivity range from ISO 100 to ISO 1600. The corresponding ISO settings for the Fujifilm GFX 100S are ISO 100 to ISO 12800, with the possibility to increase the ISO range to 50-102400.
In terms of underlying technology, the 350D is build around a CMOS sensor, while the GFX 100S uses a BSI-CMOS imager. Both cameras use a Bayer filter for capturing RGB colors on a square grid of photosensors. This arrangement is found in most digital cameras.

Many modern cameras cannot only take still pictures, but also record videos. The GFX 100S indeed provides for movie recording, while the 350D does not. The highest resolution format that the GFX 100S can use is 4K/30p.

One difference between the cameras concerns the presence of an on-board flash. The 350D has one, while the GFX 100S does not. While the built-in flash of the 350D is not very powerful, it can at times be useful as a fill-in light.
The reported shutter speed information refers to the use of the mechanical shutter. Yet, some cameras only have an electronic shutter, while others have an electronic shutter in addition to a mechanical one. It is notable that the GFX 100S offers wifi support, which can be a very convenient means to transfer image data to an off-camera location. In contrast, the 350D does not provide wifi capability.
